Ide o \u0161pecifick\u00fd druh jatern\u00edc vyr\u00e1ban\u00fdch starou remeselnou met\u00f3dou. \u0160ialence maj\u00fa zakr\u00faten\u00fd tvar slim\u00e1ka, nezvy\u010dajn\u00fd pre jaternice. \u0160pecifick\u00e9 s\u00fa svojou n\u00e1pl\u0148ou, ktor\u00e1 je pripraven\u00e1 z nastr\u00fahan\u00fdch zemiakov, mlet\u00fdch \u0161kvariek, cibule a koren\u00edn, a plnen\u00e1 do pr\u00edrodn\u00fdch baran\u00edch \u010driev. Pred pod\u00e1van\u00edm sa pomaly varia za st\u00e1leho mie\u0161ania vo vode s teplotou pribli\u017ene 90\u202f\u00b0C. Maj\u00fa m\u00e4kk\u00fa konzistenciu a zemiakovo-korenist\u00fa v\u00f4\u0148u a chu\u0165.\u00a0<\/p>\n\n\n\n<p>Dobr\u00e9 meno v\u00fdrobku je zalo\u017een\u00e9 nielen na kvalite, ale aj na zachov\u00e1van\u00ed tradi\u010dnej recept\u00fary. Cel\u00fd v\u00fdrobn\u00fd proces prebieha v regi\u00f3ne Liptov, ktor\u00fd je zn\u00e1my pestovan\u00edm zemiakov a sebesta\u010dn\u00fdm chovom hospod\u00e1rskych zvierat. Svoje pomenovanie z\u00edskali pod\u013ea regi\u00f3nu Liptova a n\u00e1zov \u201e\u0161ialence\u201c symbolizuje pr\u00e1cnos\u0165 ich pr\u00edpravy.&nbsp;Chr\u00e1nen\u00e9 zemepisn\u00e9 ozna\u010denie (CHZO) zaru\u010duje, \u017ee aspo\u0148 jedno \u0161t\u00e1dium v\u00fdroby, spracovania alebo pr\u00edpravy sa uskuto\u010d\u0148uje v danom regi\u00f3ne.&nbsp;<\/p>\n\n\n\n<p>V novembri 2025 zverejnila Eur\u00f3pska komisia\u00a0\u017eiados\u0165 o z\u00e1pis do registra chr\u00e1nen\u00fdch zemepisn\u00fdch ozna\u010den\u00ed. Uplynut\u00edm lehoty troch mesiacov, po\u010das ktor\u00fdch je bolo mo\u017en\u00e9 poda\u0165 n\u00e1mietku Komisii. L<em>iptovsk\u00e9 \u0161ialence<\/em>\u00a0ofici\u00e1lne z\u00edskali chr\u00e1nen\u00e9 ozna\u010denie p\u00f4vodu. St\u00e1vaj\u00fa sa tak 31. slovensk\u00fdm produktom uveden\u00fdm\u00a0v registri ozna\u010denia \u00danie eAmbrosia.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"aims\">Ciele syst\u00e9mov kvality E\u00da<\/h2>\n\n\n\n<p>Cie\u013eom politiky kvality E\u00da je chr\u00e1ni\u0165 n\u00e1zvy konkr\u00e9tnych v\u00fdrobkov s cie\u013eom propagova\u0165 ich jedine\u010dn\u00e9 vlastnosti spojen\u00e9 s ich zemepisn\u00fdm p\u00f4vodom, ako aj s tradi\u010dn\u00fdm know-how.<\/p>\n\n\n\n<p>N\u00e1zvom v\u00fdrobkov mo\u017eno udeli\u0165 \u201ezemepisn\u00e9 ozna\u010denie\u201c (GI), ak maj\u00fa \u0161pecifick\u00fa s\u00favislos\u0165 s miestom, kde sa vyr\u00e1baj\u00fa. Uznanie GI umo\u017e\u0148uje spotrebite\u013eom d\u00f4verova\u0165 kvalitn\u00fdm v\u00fdrobkom a rozli\u0161ova\u0165 ich a z\u00e1rove\u0148 pom\u00e1ha v\u00fdrobcom lep\u0161ie pred\u00e1va\u0165 ich v\u00fdrobky.<\/p>\n\n\n\n<p id=\"d1e139-1-1\"><em>Opis po\u013enohospod\u00e1rskeho v\u00fdrobku, na ktor\u00fd sa vz\u0165ahuje registrovan\u00fd n\u00e1zov<\/em><\/p>\n\n\n\n<p>\u201eLiptovsk\u00e9 \u0161ialence\u201c s\u00fa \u0161pecifick\u00fdm druhom jatern\u00edc vyr\u00e1ban\u00fdch starou remeselnou met\u00f3dou. \u0160pecifickos\u0165 v\u00fdrobku predstavuje zemiakov\u00e1 n\u00e1pl\u0148 so \u0161kvarkami a&nbsp;koren\u00edm, plnen\u00e1 do pr\u00edrodn\u00fdch baran\u00edch \u010driev. \u201eLiptovsk\u00e9 \u0161ialence\u201c s\u00fa netrvanliv\u00fd v\u00fdrobok.<\/p>\n\n\n\n<p>V\u00fdrobok m\u00e1 \u0161pecifick\u00fd (zakr\u00faten\u00fd\/sto\u010den\u00fd) tvar slim\u00e1ka, nezvy\u010dajn\u00fd pre jaternice. Priemer \u010dreva po naplnen\u00ed je 14 a\u017e 30&nbsp;mm, d\u013a\u017eka 200 a\u017e 450&nbsp;mm a&nbsp;hmotnos\u0165 100 a\u017e 400&nbsp;g. Po naplnen\u00ed sa v\u00fdrobok v\u010faka svojej hr\u00fabke \u013eahko tvaruje. \u010crevo tesne dolieha k&nbsp;n\u00e1plni, ktor\u00e1 je pripraven\u00e1 z&nbsp;nastr\u00fahan\u00fdch zemiakov, mlet\u00fdch \u0161kvariek a&nbsp;cibule na jemn\u00fa \u0161trukt\u00faru a&nbsp;s&nbsp;koreninami. Podiel zemiakov na 1&nbsp;kg je 75 a\u017e 85&nbsp;% hmotnosti, \u0161kvariek 8 a\u017e 10&nbsp;% hmotnosti, brav\u010dovej masti 5&nbsp;% a&nbsp;soli najviac do 1,7&nbsp;%.<\/p>\n\n\n\n<p>Konzistencia v\u00fdrobku je m\u00e4kk\u00e1, povrch hladk\u00fd, mierne vlhk\u00fd a&nbsp;\u010dist\u00fd. Farba na povrchu je svetlosiv\u00e1 a&nbsp;na priereze je sivo\u017elt\u00e1. V\u00f4\u0148a a&nbsp;chu\u0165 je zemiakovo-korenist\u00e1.<\/p>\n\n\n\n<p>\u201eLiptovsk\u00e9 \u0161ialence\u201c sa pred\u00e1vaj\u00fa uvaren\u00e9 a&nbsp;pred priamou konzum\u00e1ciou sa tepelne v\u00fdchode, Z\u00e1padn\u00e9 Tatry a&nbsp;Cho\u010dsk\u00e9 vrchy na severe, N\u00edzke Tatry na juhu a&nbsp;Ve\u013ek\u00e1 Fatra na z\u00e1pade. Geograficky je Liptov ucelenou oblas\u0165ou, ktor\u00e1 zah\u0155\u0148a okresy Liptovsk\u00fd Mikul\u00e1\u0161 a&nbsp;Ru\u017eomberok.<\/p>\n\n\n\n<p id=\"d1e297-1-1\">6.&nbsp;&nbsp;&nbsp;<strong>S\u00favislos\u0165 so zemepisnou oblas\u0165ou<\/strong><\/p>\n\n\n\n<p>Pr\u00ed\u010dinn\u00e1 s\u00favislos\u0165 je zalo\u017een\u00e1 na kvalite, vlastnostiach a&nbsp;dobrom mene v\u00fdrobku \u201eLiptovsk\u00e9 \u0161ialence\u201c.<\/p>\n\n\n\n<p>Vymedzen\u00e1 zemepisn\u00e1 oblas\u0165 \u2013 Liptov bol v\u017edy v\u00fdznamnou zemiakarskou oblas\u0165ou Slovenska a&nbsp;s\u00fa\u010dasne bol sebesta\u010dn\u00fd aj v&nbsp;chove hospod\u00e1rskych zvierat. V\u00fdrobok \u201eLiptovsk\u00e9 \u0161ialence\u201c sa vyr\u00e1ba len na vymedzenom \u00fazem\u00ed.<\/p>\n\n\n\n<p id=\"d1e339-1-1\"><em>Kvalita a&nbsp;dobr\u00e9 meno<\/em><\/p>\n\n\n\n<p>\u201eLiptovsk\u00e9 \u0161ialence\u201c boli odd\u00e1vna ob\u013e\u00fabenou poch\u00fa\u0165kou obyvate\u013eov Liptova pri r\u00f4znych oslav\u00e1ch, na jarmokoch alebo hodoch. Ob\u013euba tejto poch\u00fa\u0165ky pretrv\u00e1va podnes. Mesto Liptovsk\u00fd Mikul\u00e1\u0161 organizuje ka\u017edoro\u010dne \u0160v\u00e1bkafest (\u0161v\u00e1bka je hovorov\u00fd v\u00fdraz pre zemiaky v&nbsp;regi\u00f3ne Liptova). Zemiakov\u00fd festival \u0160v\u00e1bkafest sa organizuje v&nbsp;regi\u00f3ne Liptova u\u017e nieko\u013eko rokov a&nbsp;jeho cie\u013eom je pripom\u00edna\u0165 zemiakarsk\u00e9 trad\u00edcie, a&nbsp;to nielen zemiaky ako po\u013enohospod\u00e1rsku plodinu, ale aj v\u0161etky v\u00fdrobky, ktor\u00e9 sa z&nbsp;nich daj\u00fa pripravi\u0165, teda aj \u201eLiptovsk\u00e9 \u0161ialence\u201c.<\/p>\n\n\n\n<p>\u0160v\u00e1bkafestu sa z\u00fa\u010dast\u0148uj\u00fa dom\u00e1ci i&nbsp;zahrani\u010dn\u00ed n\u00e1v\u0161tevn\u00edci, ktor\u00ed vyh\u013ead\u00e1vaj\u00fa festival pr\u00e1ve kv\u00f4li tradi\u010dn\u00fdm region\u00e1lnym v\u00fdrobkom (aj v\u00fdrobku \u201eLiptovsk\u00e9 \u0161ialence\u201c) s&nbsp;vysokou kvalitou a&nbsp;dobr\u00fdm menom \u0161\u00edriacim sa nielen \u00fastnym podan\u00edm, ale aj internetov\u00fdmi str\u00e1nkami a&nbsp;in\u00fdmi m\u00e9diami na Slovensku, ale i&nbsp;v&nbsp;zahrani\u010d\u00ed.<\/p>\n\n\n\n<p>Kvalitu a&nbsp;dobr\u00fa poves\u0165 v\u00fdrobku \u201eLiptovsk\u00e9 \u0161ialence\u201c preukazuje ponuka v\u00fdrobku v&nbsp;re\u0161taura\u010dn\u00fdch zariadeniach, kde sa v\u00fdrobok pon\u00faka ako slovensk\u00e9 \u013eudov\u00e9 jedlo alebo tradi\u010dn\u00e1 liptovsk\u00e1 \u0161pecialita (region\u00e1lna), ale aj ako s\u00fa\u010das\u0165 svadobn\u00e9ho menu. Dobr\u00e9 meno v\u00fdrobku je zalo\u017een\u00e9 nielen na kvalite, ale aj na zachov\u00e1van\u00ed tradi\u010dnej recept\u00fary.
